Rancher-Auflauf

Heute gibt es Rancher-Auflauf, angelehnt an die Mexikanischen huevos rancheros.

Also 3 Paprika (rot, gelb und orang), Speck in würfeln ca. 300g. 500 g Kartoffeln in Scheiben und gekocht. Drei Eier als Spiegeleier mit weichem Eigelb. Gewürze und Knoblauch nach Wahl. Paprika würfeln und mit dem Speck anbraten. Dann mit den gekochten Kartoffeln in die Auflaufform und die Eier oben drauf.

Dann noch den Mozzarella oben drauf und bei 200 Grad für zwanzig Minuten in den Ofen. Mit Umluft für die letzten fünf Minuten für die Bräune.
